I have had this happen to me. My mother in law actually broke a brand new chair that was a part of a new dining room set. :/ I felt bad because it really wasn’t her fault.
I like the idea of setting up a chair just for her by saying oh this chair is much more comfortable. Hopefully she will take the hint and not risk the higher chair.

Use the sofa and TV trays and say, "That is so uncomfortable, let’s sit here" and don’t worry about it.
They will be thankful that you were so considerate, and I don’t think that would hurt their feelings. Large people know when something is too small.

My brother in law is a pretty big guy too and he has broken quite a few of our chairs.Especially the ones for outside.You think that plastic would hold his fat butt but it wouldn’t.As plastic ages it gets weaker and that is why ours broke.
I think you should get a chair for her in advanced, and say something like, "Oh, here’s your chair -insert name here-."
If she’s large, she will already understand. Try putting cushions on the chair in mind to make it clear you thought ahead of time for her.

Anyway i guess i would try to offer them a different chair, maybe a more comfortable one or maybe make the excuse that the chair isn’t stable or something.. sorry, Hope you find a way. Good Luck!
