So as you're walking up to the bar…?
All of the lights are off except for 1, All of the chairs are turned upside down on the tables (as are the bar stools), there’s no music, no smell of food (as it’s a small restaurant, too) and all you see inside is 1 guy…why in the f*** do you still try the door and follow it with something witty like; "Hey, bro. Are you open?"

He was drunk and thought he might as well give it his best shot. Sometimes people try things they know are irrational and hope it works out anyway. (I respond to a lot of questions in the Higher Education section of Y!A, a very common example are people asking something like "if it says I need calculus before I can apply, can I still apply if I haven’t taken it yet?" Makes no sense at all, but people do things like this all the time).
Anyway, back to your incident. When the guy goes and tries there are two results: if you are open, awesome then he can drink more, if you are closed then…well, what is the worst that could happen? Someone might post a question on Y!A about it? lol.
because people are stupid!
well that depends on the situation, i can think of a number of times that I might try it.
If its almost to opening time, say the bar opens at 5pm and its like 4:40pm, then sometimes particularly with small busnesses, they will let you in and serve you a drink, while they finish opening up.
if they are just closing, and again with small bars they may have what we call in england a "lock in" that is the let a few trusted and well known cutmers stay after the bar has officaly closed.
you also never no your luck, if you ask whats the worst that can happen, they could say no and you look a bit silly for asking, but they could also say yes, in which case your in.
